I am planning a backpacking trip to Europe later in the year. I'm relatively new to DSLR photography and only have 2 lenses for my 450, the two lens pack 18-55 and 55-250 that came packaged with the camera
Space will be at a premium and I'm wondering whether I can get by with one lens. But which one? I am quite prepared to buy another lens - plan at some stage to buy a macro that is suitable for both insect/flowers and portraits.
What would you suggest I take?

Consider the Canon 17-85mm 4.5-5.6 IS. This is a very good walking around lens that provides the equivalent of a 27-136mm 35mm equivalent. The IS will be very beneficial with 3 stops of stabilization. IQ is very respectable. Additionally consider taking a back-up P/S camera with you in case something happens to your 450.

You also need to tell us what kind of things you like to shoot. If it is wildlife, the 85 mm might not be enough. I think you should stick with both lenses, Being EF-S, they are already about as small as you can get for that much focal length range.
A monopod or tripod might be nice since these are relatively slow lenses and you might want to steady things. A monopod can also doubles as a walking stick.
